Strawberry jelly cheesecake
Easy to prepare, fresh and tasty, cheesecake is one of the easiest to approach cake recipes, if you have the right ingredients and quantities at hand.
This time we offer you a baked dough based on biscuits, for which you need 100g digestive biscuits, 50g butter, 30g flour, 25g powdered sugar and 2 eggs. For the cream cheese you will use ricotta (500g), whipped cream obtained from sour cream (150ml) and powdered sugar (1 tablespoon), gelatin for texture (15g), water (40ml) and 100g powdered sugar. The jelly is made from fresh or frozen strawberries, depending on the season and availability (200g), rose wine (150ml), powdered sugar (15g), gelatin (15g) and 40l of water.
The countertop mixture is obtained in a few minutes, so if you know that your oven is hard to heat, you can set it from now on to 180 degrees. Then grind the biscuits very well and mix them with the butter you melted in a bain-marie and let it cool a little, so that it is still almost liquid and easy to mix with the biscuits. Add flour and mix. In another bowl combine the eggs with the sugar and use the mixer to quickly get a fluffy and even mixture. Then add it over the biscuit and incorporate all the ingredients, mixing with a spoon until you get a dough texture. Put it in a round tray or with any other shape and put it in the oven for 10-12 minutes, and when it is ready, take it out and let it cool.
In the meantime, you can start working on the cream. Put the hydrated gelatin in a kettle with 40ml of water and take advantage of the waiting minutes to mix ricotta with powdered sugar and separately, whipped cream with sugar, according to the instructions on the box. Then combine the cheese with the whipped cream obtained and mix well, stirring slowly, with a spatula or a large spoon. Put the gelatin in a bain-marie and when it is completely dissolved, add 2 tablespoons of the previously prepared cream, stirring until it turns into a homogeneous liquid. Pour the contents over the cream cheese and mix quickly with the mixer.
The cream is ready, so is the countertop, it's time to put them together. So take the cream with a spatula and cover the top evenly, if it is cold enough. If it's still hot, wait a little longer and take care of the jelly. It also starts with gelatin, which you hydrate in 40ml of water. Meanwhile, boil the strawberries, sugar and sugar in the rose wine, and pass when the fruits become quite soft. Continue to boil and take the foam on top with a teaspoon, until it does not form at all, at which point it is time to add gelatin.
After you have added the gelatin and mixed it well, take everything off the heat and let it cool, then pour it over the cheese. The jelly must be warm – cold enough not to affect and melt the cream cheese, but warm enough to still be liquid and settle easily on the entire surface. Put the cake in the fridge and leave it for at least 4-5 hours, then decorate to your liking and serve your loved ones.
Sweet potato cream soup
It is incredibly good and very easy to make, but you will need a vertical mixer ( here is a list of compared products ) to get the right texture. The list of ingredients includes: sweet potatoes (1 kg), vegetable or chicken soup (1 liter), onions (1 piece), butter (50g). As spices we recommend salt, pepper, thyme, and for serving, a little liquid cream and cepsoara.
Because we are talking about a fairly large amount, for the whole family, it is good to prepare everything in an average pot, about 3 liters. Finely chop the onion and then sauté in butter until translucent. Add the soup and until it starts to boil, cut the potatoes into cubes, which you add when you see that the water starts to boil. Cover with a lid and let cook for up to 20 minutes.
Set the lid aside and add the spices, then simmer until you are sure the vegetables are soft enough to pass easily. Mix everything with the mixer and serve with sour cream, finely chopped onion and a little thyme sprinkled on top.
Sounds pretentious, but it's not. It involves few ingredients and only a few easy-to-follow steps, with an impressive result. You need: cottage cheese (150g, well drained), eggs (4 egg yolks, 3 egg whites), sugar (80g powder, 1 packet of vanilla), grated lemon peel, butter to form and a little salt.
Put the yolks in a large bowl, together with the 80g of sugar, and mix them until you get a creamy and light texture. In another bowl, mix the egg whites with the vanilla sugar, using the mixer, until the composition is thick enough not to stir if you tilt the bowl.
Prepare the oven by turning it on and setting it at 200 degrees Celsius and boil the water in a pan or pot, so that you can put the forms in the bain-marie. The latter is the time to grease them with butter and powder them a little with powdered sugar.
Gradually add the yolks, cottage cheese and lemon zest to the mixture, stirring lightly with a spoon. Then incorporate, slowly and carefully, the mixture of egg white and sugar. Pour the composition obtained in each form so that the upper third remains empty, to allow the filling to grow nicely. Put the forms in the pan with hot water and then put them in the oven for 5 minutes, at 200 o C. After 5 minutes, lower the baking temperature to 160 o C and leave for another 15-20 minutes.
