A simple recipe with an amazing texture. You can make this bread anyway, both simple and with different fillings. If you choose the simple option, it is enough to break a piece / slice of bread and spread it with jam. With a cup of milk it is divine, it can be the perfect breakfast or dinner. I chose the version stuffed with walnuts . My family wanted something with walnuts and then I adapted this version of Banana bread with walnuts.
Two weeks ago I received a basket of goodies from Koliba . Butter is our favorite , so I used it with pleasure in today's recipe…
For the dough:
350 gr flour
50 gr milk powder
1 mashed banana
30 gr sugar
1 pinch of salt
70 ml of warm milk
1 sachet of dry yeast
For the filling:
200-220 gr ground walnuts
70 gr raw sugar
50 gr milk powder
1 egg white
Method of preparation:
Knead the dough as follows: in the bowl of a robot put flour, banana puree, powdered milk, sugar, salt, egg mixed with warm milk, and finally put the yeast. Assemble the dough kneading hook and turn on the machine at the lowest level. Let it knead for about 5 minutes, until the dough forms, then increase the speed to the next step. Knead the dough for about 15 minutes in total. Add a cube of soft butter and continue kneading on the robot. When the butter has been incorporated into the dough, add the following cube.
The dough can be kneaded by hand, if you do not have a robot. Put the dough in a bowl, cover it with a towel or cling film and leave it to rise for 1 hour in a warm place.
After an hour, the dough doubled in volume. We take it out on the work table, knead it lightly and divide it in two. We give the round shape to the two pieces, we leave them on the table, we cover them and we leave them to ferment for another 15-20 minutes.
For the filling: beat the egg whites with the sugar. Add ground walnuts and powdered milk, mix the ingredients.
We take the first piece of dough, we spread it with the rolling pin in a 1cm thick sheet. I put half of the filling and spread it on the entire surface of the dough. I rolled the dough, then cut it into 2-3 cm thick slices. I put it in a bowl greased with a little oil. It is important to place the dough as nicely as possible in the tray in order to come out as nice as possible after baking. Do the same with the next piece of dough.
If you choose the simple version, without the filling, do the same, the steps are the same, just don't fill it. Roll out the dough, cut it and place it nicely in the pan.
Cover the dish with a towel or cling film, leave to rise again for 40-50 minutes. Bake in a preheated oven at 17-175 degrees for 25-30 minutes, until lightly browned on top. At the end, after baking, grease the hot dough with melted butter. Allow to cool and serve. Enjoi !!!!
