Alsatian pies

A very good cake similar to the American cheesecake! I fell in love with it from how I saw it and kept looking for recipes on the net until I found something that was a bit ok (not all recipes on the net are correct and good and I prefer to check from several sources) . It is very good, I highly recommend it, if you like tarts and cheesecake 🙂

Ingredients:

For the dough:

  • 250 g flour
  • 125 g butter
  • 40 g sugar
  • 1 sachet of vanilla sugar
  • grated peel of a lemon (Organic if you can find it)
  • 5 tablespoons cold milk
  • a pinch of salt
For the filling:
  • 500 g quark cheese (a kind of creamy cow’s cheese)
  • 250 g sour cream (sour cream with 30% fat)
  • 4 eggs
  • 150 g flour
  • 250 g sugar
  • 2 sachets of vanilla sugar
  • a pinch of salt

Preparation :

First prepare the tart dough : mix the flour with the salt powder and sugar in a bowl, add the lemon peel and diced butter and mix lightly with your hands. At the end, add the milk and knead until you get a homogeneous dough – if the dough is too hard you can add a second tablespoon of milk. Wrap the dough in foil and refrigerate for about an hour.

For the filling : mix in a bowl the flour with the sugar, vanilla sugar, cheese, sour cream and yolks until smooth.

Separately mix the egg whites well with a pinch of salt.

Lightly mix with a spatula the beaten egg whites with the cheese mixture.

Spread the dough with the rolling pin on the floured table, giving it a round shape with which we can dress a cake shape, including its walls. Place the dough in the shape of a cake greased with butter or lined with baking paper, spread well with your hands if needed, then pour the filling and level lightly.
Bake the tart for 20-30 minutes at 180 degrees, then another 20 minutes at 150 degrees. In order not to crack on the surface, it is preferable to leave it to cool in the oven, and then at room temperature, after which it is left to cool until serving.
Before cutting it you can powder it with powdered sugar.
