Appetizer with mozzarella and cherry tomatoes

I renewed… I took ramekin. :)) I have been dreaming of them for a long time and now I am happy to have them. I love you so much

I had just put the bread machine to work for a loaf of bread. And since I wanted to eat something light, without meat, I made these "popcorn" with mozzarella and cherry tomatoes. Simple and very good!

Appetizer with mozzarella and cherry tomatoes

Bread dough:

~ 500 g flour
2 teaspoons salt
10 g dry yeast
1 teaspoon sugar
2 tablespoons olive oil
250 ml milk (or water)

fresh mozzarella
salt and pepper
Cherry tomatoes

The dough is prepared in the bread machine, putting the ingredients in the vat of the machine, in the order described. The kneading and leavening program is used.

For those who knead by hand:

Mix the yeast with the sugar, then liquefy with a few tablespoons of warm milk.

Put the flour in a bowl, make a hole in the middle and pour the yeast. The rest of the milk mixed with the oil and salt is poured into the bowl over the flour. Knead an elastic and non-sticky dough, which is left to rise until it doubles in volume.

The raised dough is turned over on a lightly floured table and spread in a round sheet about 0.5 cm thick. Cut dough circles with the mouth of a glass or with a special shape for cutting the dough. Put a circle of dough on the bottom of the ceramic bowl (ramkin) well greased with oil, then 3 circles of dough around the bowl.

Fill the inside with diced mozzarella, season to taste with salt, pepper and basil. Put a cherry tomato on top and bake on medium heat for about half an hour, until lightly browned on top.

Allow to cool slightly, then remove from the bowl and serve. Hot or cold, according to preference.
