An apple tart (and with a little chocolate !! :))) very good and very easy to prepare. It's absolutely delicious, I assure you! 😉

* For countertop:

* 3 eggs
* 3 tablespoons sugar
* 1 tablespoon oil
* 3 tablespoons flour
* vanilla essence
* 1/2 teaspoon baking powder

Whisk the egg whites with a pinch of salt. Add the sugar and mix until you get a glossy meringue. Rub the yolks with oil and vanilla, then pour over the meringue. The flour is mixed with the baking powder, then it is easily incorporated in the composition.

The composition is poured into the tart tray well greased with butter and put in the oven over medium heat, until it is nicely browned on top. Leave to cool in the pan.

* For apple mousse:

* 4 mere
* sugar (according to taste and depending on how sweet the apples are)
* 2 cinnamon sticks
* 10 g gelatin
* 50 ml liquid cream

We hydrate the gelatin in a few tablespoons of cold water.

Peeled apples are cut into cubes and boiled in a little water. When it boils, add the sugar and cinnamon sticks. Boil until the apples begin to soften. Put them in a sieve and let them drain then pass them with the vertical mixer, thus obtaining a very fine apple puree.

While the apple puree is still hot, add gelatin and mix until it dissolves. It's getting cold.

Whipped cream is incorporated into the cold puree.

* For the chocolate layer:

* 100 g dark chocolate
* 50 ml fresh
* 50 g butter

Melt the broken chocolate pieces over low heat together with the whipped cream and butter. When it has reached the boiling point, set it aside and mix the composition. Let it cool.

* For decoration:

* ground nut
* whipped cream

The cooled top is turned over on a plate and lightly syruped with a few tablespoons of juice in which the apples were boiled. Pour the chocolate and level, then pour the apple puree and sprinkle a little walnut.

Let the tart cool for 1 hour, then garnish with whipped cream and portion.
