When you want something easy to make and delicious to the last crumb, you can try this apple tart and vanilla cream . You will not be sorry, literally! Apples can be replaced with any other kind of fruit you like, just as they can be put raw, not necessarily caramelized.

Ingredients:

  • For the countertop:
  • 1 sheet of puff pastry dough
  • 1 egg yolk
  • 2 tablespoons milk
  • For vanilla cream:
  • 3 tablespoons starch
  • 3 tablespoons sugar
  • 250 ml milk
  • 2 yolks
  • 100 g butter
  • seeds from a vanilla pod
  • For caramelized apples:
  • ~ 600 g diced apples
  • 150 g sugar
  • 100 g butter
  • 200 ml whipped cream

From the partially thawed puff pastry dough, cut a border of about 2 cm, around the sheet. Grease the sheet with the milk yolk. Place the strips of dough on the edge of the sheet, forming a border. Grease the border with yolk, prick the sheet from place to place with a fork and put in the oven over medium heat until golden brown.

Vanilla cream:

We put the seeds from the vanilla pod in the milk and put them on the fire until they boil.

The yolks are mixed with the sugar until they turn white and become like a cream. Add the starch and mix. Then pour the milk into a thin thread, mixing at low speed. Then put the pot on low heat and stirring constantly, boil (without boiling) until the composition thickens. Set aside and incorporate the butter that I left at room temperature. Homogenize and leave to cool.

Caramelized apples:

The sugar is caramelized and when it has become liquid, set aside and add the butter, then the whipped cream. Put again on low heat and stirring constantly, boil until the caramel melts. Add the apples and mix lightly. Boil in caramel until slightly softened. Set aside and leave to cool.

Pour the vanilla cream over the baked and cooled puff pastry sheet, and spread the caramelized apples evenly on top.
