If you like the taste of lemon in cakes , combined with a delicious meringue, you have found the perfect recipe for a wonderful start to the day. This lemon and meringue cake is perfect next to a cup of coffee for parents or one with milk for children.
- 4 eggs
- 100 g sugar
- 140 g flour
- 60 g milk powder
- 50 ml oil
- 50 ml lemon juice
- 1 teaspoon baking powder
- For meringue:
- 2 egg whites
- 3 tablespoons sugar
- vanilla essence
- In addition, we will need:
- 2-3 tablespoons black cocoa
Preparation Check with lemon and meringue:
Eggs are mixed with a pinch of salt until they double in volume. Add the sugar and continue mixing until you get a dense and light foam. Mixing further, add the oil in a thin thread, then the lemon juice. At the end, incorporate the flour mixed with baking powder and powdered milk. Mix lightly with a spatula, with movements from bottom to top.
The obtained composition is poured into a cake pan greased with oil and lined with flour. Bake on medium heat for about 15-20 minutes, until the surface of the cake becomes shiny and slightly golden.
Meanwhile we prepare the meringue:
Whisk the egg whites with a pinch of salt. Add the sugar little by little, mixing well until you get a glossy foam, which makes spikes when you remove the blades from the mixer. Flavor with vanilla to taste.
Remove the cake pan from the oven and powder black cocoa powder on the entire surface of the cake, 2-3 tablespoons. Cover everything with meringue and put back in the oven over high heat, until the meringue is lightly browned.
Leave to cool in the pan, take out on a plate and portion as desired.
