
* 400 g white beans
* 2 large onions
* 1 carrot
* 100 ml oil
* garlic to taste
* 1/2 teaspoon paprika
* salt
The beans soaked for a few hours in cold water are boiled. Change the water at the first boil, fill the pan again with another boiled water. Repeat the operation a few times, and in the last water boil 1 carrot and 1 onion, cut into 4.
When the beans are cooked, drain the juice and pass them in a blender. Add the oil, crushed garlic (the more the better :))), adjust the salt taste and mix until it becomes like a fluffy cream.
Finely chop the scallions and fry them in a few tablespoons of olive oil. When it is ready, add the paprika and mix well. After it has cooled, pour it over the beans.
Serve cold with Genoese focaccia.
