I have such a hunch that you expect some cake recipes from me :))) but I tell you honestly that this salad recipe is not to be discarded 😉 I haven't made cakes much lately, I've only made sweets like pancakes or papanasi, to the delight and delight of the dwarves, but I promise to return in the coming days.
So, today we have a good and delicious pod bean salad !
- ~ 500 g beans
- a few branches of thyme
- For avocado mayonnaise:
- 1 well baked avocado
- lemon juice
- 3-4 tablespoons olive oil
- a few cloves of garlic
- salt and pepper
Preparation Bean salad with avocado mayonnaise:
We clean and wash the beans well, cut them into suitable pieces, then boil it in salted water and a few sprigs of thyme. When it is ready, put it in a strainer to drain the water well.
- If you want, depending on your preference, you can cut beans and small pieces
Meanwhile, prepare the avocado mayonnaise . Cut the avocado fruit in half, remove the seeds and with a spoon take out the core that we will crush with a fork in a bowl. Pour the oil over the avocado paste and mix well. Salt and pepper to taste, add a little lemon juice and season with crushed garlic.
- You can mix the avocado core to get a fine paste, I like it… to find small pieces of fruit
Put the beans in a bowl, add the avocado mayonnaise and mix lightly.
