For Easter I really wanted to make a light cake with whipped cream and fruit. I kept oscillating between Diplomat cake and the Black Forest . In the end I came to the conclusion that the Diplomat is not made as fast as I would like, for the Black Forest I did not find cherries… This is how this cake with fruit and cream came out in the end.

Good! Very good. The countertops are a bit uneven, because I made the wrong measurements when cutting, but you shouldn't do like me, right? :)))

Ingredients:

  • For the countertop:
  • 3 eggs
  • 3 tablespoons sugar
  • 2 tablespoons oil
  • 2 tablespoons cocoa
  • 3 tablespoons flour
  • 1 teaspoon baking powder

  • For the filling:
  • 1 exotic fruit compote (pineapple, papaya and guava)
  • 250 ml whipped cream
  • 1 tablespoon vanilla sugar
  • 1 whipped cream hardener
  • For chocolate cream:
  • 50 g dark chocolate
  • 100 ml whipped cream

Preparation Fruit and cream cake:

Wheat:

Whisk the egg whites with a pinch of salt. Then add the sugar and mix until you get a hard and shiny foam, like meringue. The yolks rubbed with oil and rum essence are easily incorporated into meringue, then flour mixed with baking powder and cocoa.

The obtained composition is poured into a tray (18 cm in diameter) lined with baking paper and baked over medium heat for about half an hour. The toothpick is tested. Remove the top on a grill, leave to cool, then cut into 3.

Filling:

Put the fruit from the compote in a strainer. Allow to drain well.

Whipped cream for whipping cream until it begins to gain consistency. Add the vanilla sugar and whipped cream and beat until firm and fluffy.

Chocolate cream:

Melt the broken chocolate pieces over low heat together with the whipped cream. Homogenize, let it cool, then let it cool until it hardens and cools very well. Then mix until you get a fluffy cream.

The tops will be syruped with the juice from the compote, according to your preference. Grease the first and second top with chocolate cream, put fruit on the entire surface of the top and cover with a generous layer of whipped cream.

Garnish with whipped cream and chocolate drops.
