Cake in Egypt – Original recipe

Walnut and vanilla cream cake

Ingredient was:

  • 200 g sugar
  • 8 egg whites (around 320 g)
  • 50 g breadcrumbs
  • 2 sachets of vanilla sugar
  • 160 g ground and fried walnuts / hazelnuts
  • A pinch of salt.

 

Ingredients for vanilla cream:

  • 500 ml of milk
  • 8 yolks
  • 150 g sugar
  • 65 g flour (or 30 g starch)
  • 250 g soft butter (80% fat)
  • 2 sachets of vanilla sugar
  • A pinch of salt.

 

For whipped cream and nuts:

  • 200 g sugar
  • 600 ml sour cream for whipped cream (30% fat)
  • 150 g nuts and hazelnuts
  • 50 g powdered sugar
  • Half an envelope of vanilla sugar.

 

For decoration:

  • 100 g sugar
  • 200 ml sweet whipped cream
  • 1 sea salt powder
  • Peanuts and nuts.

 

The Egyptian cake recipe uses meringue leaves with hazelnuts and walnuts, which can give you headaches when you try to prepare them for the first time, but which you should not be afraid of. It seems that this recipe is a Serbian one at the beginning, which is not very old, being able to break some rules of pastry by using a large amount of sugar, the association between whipped cream and burnt sugar or thin sheets.

The walnuts and hazelnuts for the Egyptian cake are fried a little in a hot pan and weighed to put separately on the cream and top.

Vanilla cream with butter can be made first, taking the butter out of the fridge at least 4 hours before using it to become creamier and soften. Put the milk on low heat to heat, during which time you mix the yolks, sugar, vanilla, starch and salt, mixing well, over them put the hot milk and then bring them back into the hot pot and cook over low heat. stirring constantly until it boils, ie a maximum of 5 minutes, to cook the flour.

The cream mixture is placed in a tray with plastic wrap, covering well and cooling on the balcony for about 2 hours. During this time, you will prepare the sheets and the other elements. After this time, you will gradually mix the cream with the butter that you beat first with the mixer. The end result should be a thick and fine cream.

For the walnut cake top, grind the hazelnuts and roasted walnuts, then beat the egg whites well with a pinch of salt and add the vanilla and sugar until the meringue is formed. Add the walnuts, hazelnuts and breadcrumbs over it and mix well using a spatula. Divide this walnut countertop into four equal parts that you bake in an electric oven for 14 minutes at 200 degrees Celsius (with ventilation on).

Cream cream for walnut cake is prepared by making a burnt sugar in a pan with a thicker bottom where you put the sugar and melt it over low heat, stirring when it darkens, pulling the pan off the heat and adding sea salt (fleur salt) which will turn the reddish-brown caramel into a slightly salty one. Pour the contents on a baking paper tray and spread thinly, leaving to cool. To grind, beat with a hammer.

Beat the whipped cream with walnuts and whipped cream and sweeten using two tablespoons of powdered sugar, with a little vanilla sugar, then put in it the rest of the chopped walnuts and caramel, mixing well with a spatula.

For mounting, the best cake with walnuts and meringue starts from choosing a plate of the right size, after which you put a countertop on it (you can use a ring to keep the shape of the tower). Divide the cream into four equal parts using a scale, then put a quarter of the vanilla over the counter and spread it well, on top putting an equal part of the cream and salted caramel, continuing with a sheet of countertop and the same cream process until you finish them. Refrigerate for about 3 hours, then remove the ring from the cake with walnuts and meringue.

On top, you can beat whipped cream and powdered sugar, and spread the resulting cream straight or put it with the pos in small "moate", adding caramelized nuts with 100 g of sugar and a little sea salt, which you spread on baking paper and leave to cool, then crush them. Sprinkle them on top or position them as desired. You can cut the cake as desired.

You can also make cake with ness and caramelized walnut for a more special taste, slightly bitter, putting some ness granules in butter and vanilla cream.
