bread with mushrooms and cheese

* For glue:

* 150 ml water
* 250 g black flour
* 1 teaspoon dried yeast
* 1 teaspoon salt
* 1 teaspoon sugar
* 1 tablespoon oil

Mix the yeast with the sugar and dissolve it with a little warm water. Leave it to rise for 10 minutes. Put flour, salt and oil in the bread machine bowl. Add the mayonnaise and the rest of the water and knead a suitable hard dough, which is left to rise for half an hour.

* For the filling:

* 300 g yellow
* 1 onion
* 2 cloves garlic
* salt
* thyme and basil
* 50 g cheese
* green parsley

Mushrooms cleaned, washed and well drained of water are fried together with finely chopped onion and garlic, in a few tablespoons of olive oil. Season to taste with thyme and basil, adjust the taste of salt. Leave it on low heat until all the juice left by the mushrooms decreases. Leave to cool.

The dough is spread in a tart form greased with oil. Put the hardened mushrooms on top and put the tray in the oven over medium heat until golden brown. Remove the tray from the oven, sprinkle the diced cheese on top and bake for another 5 minutes until it melts.

Sprinkle with chopped green parsley and portion.
