Today, on a big holiday, I rummaged through the quiver with cake recipes and brought a black woman for all the sabbaticals. Happy birthday to all, healthy and happy.
Chocolate, as it suits a black woman, fluffy and with delicate mascarpone cream, is a perfect cake for guests.
- For the countertop:
- 120 g chocolate with rum
- 100 g butter
- 100 g sugar
- 300 g yogurt
- 4 eggs
- 3 tablespoons black cocoa
- 225 g flour
- 1 baking powder
- For the cream:
- 100 g white chocolate
- 200 ml whipped cream
- 5 g gelatin
- 50 g sugar (preferably powder)
- 250 g mascarpone
Method of preparation:
Melt the chocolate and butter over low heat. Homogenize and leave to cool. Put the sugar in the chocolate cream and mix until it melts. Add eggs one at a time, mixing well after each. Slowly pour the yogurt, mix and then slowly incorporate the flour mixed with cocoa, a pinch of salt and baking powder.
Pour the composition into a tray (25/35 cm) lined with baking paper and bake on medium heat for about 40 minutes. The surface of the cake will crack and will be firm to the touch. Remove the top on a grill and leave to cool.
We hydrate the gelatin in a few tablespoons of cold water.
The chocolate is broken into pieces and mixed with whipped cream, melt it over low heat. When it has reached the boiling point, set it aside, mix it and leave it to cool. When it has reached a bearable temperature on the finger, add gelatin and mix until it dissolves completely. Let cool until the cream starts to thicken.
Mix the cream with the sugar, then add the mascarpone. Mix until smooth.
Put the cream over the well-cooled top and refrigerate for about an hour. Powder with cocoa and portion. Or, portion and powder with cocoa. :))
