Negresa recipe with white chocolate and caramelized nuts
- * For countertop:
- * 2 eggs
- * 150 g sugar
- * 100 ml oil
- * 200 ml milk
- * 250 g flour
- * 3 tablespoons plum jam
- * 3 tablespoons cocoa
- * 1 baking powder
- * 50 g walnuts broken into large pieces
- * For the glaze:
- * 150 g white chocolate
- * ~ 50 ml milk
- * For decoration:
- * 50 g sugar
- * 50 g nuts
Preparation Negresa with white chocolate and caramelized nuts:
Mix eggs well with sugar and a pinch of salt until it doubles in volume. Add the oil and mix until the composition becomes like a cream. We also put the jam and homogenize. Pour the milk and mix gently. Next, add the flour mixed with baking powder and cocoa and finally the walnut broken into large pieces by hand.
The composition is placed in a tray (20/30 cm) lined with baking paper and put in the oven over medium heat for about 25 minutes. Remove the top on a grill and leave to cool.
Melt the chocolate over low heat (or in the microwave) together with the milk. If necessary, you can add a little more milk. It must have the consistency of sour cream. Set aside and leave to cool.
For decoration, melt the sugar in a saucepan. When it has become liquid (be careful not to burn it) add the broken walnuts in large pieces and mix well. We put the caramelized walnuts on a piece of baking paper and let it cool. We break pieces by hand and put them in the blender and mix them as finely as we like.
Pour the cooled icing over the cooled countertop, but not hardened. Level, sprinkle with caramelized nuts and refrigerate for 1 hour, then portion.
