A quick recipe, a salad with bulgur and vegetables, only good for when you're in a hurry, but you want it to be good and satisfying. 😉

Bulgur wheat  salad turkish recipe with vegetables

Ingredients:

  • 1/2 cup bulgur
  • 1 carrot
  • 1 piece of celery
  • 1 small onion
  • green parsley
  • lemon juice
  • olive oil
  • salt and pepper

Preparation Bulgur salad with vegetables:

Bring water to a boil with a pinch of salt. When it starts to boil, turn off the heat, put the bulgur and cover with a lid. We leave it like this until it softens enough. If the bulgur absorbs all the water, loosen it with a fork and let it cool. If there is any water left, put it in a thick sieve and let it drain well.

Carrot and celery are cleaned, washed and put on a special grater for raw vegetables or cut into thin sticks. Cut the onion into juliennes and chop the parsley finely.

In a bowl, mix the cooled bulgur and the vegetables. Salt and pepper to taste, pour a few tablespoons of olive oil and squeeze the lemon juice.

Mix well and serve.
