- 4 yolks

A dish that most Romanians expect for Easter is Easter with sweet cheese, which is rarely missing from the traditional table. Such an Easter recipe will require a little time spent in the kitchen because you will prepare the dough and the filling, but also when you start to feel the first smells of baking in the oven all those in the house will be turned on their backs and will not wait to taste !
You will start preparing the fluffy Easter recipe with sweet cheese and sifting the flour in a large bowl, next to it, in a smaller one, putting the yeast with two teaspoons of sugar that are left to activate.
Separate the eggs and beat the yolks with the rest of the sugar and salt until they get a homogeneous texture. Add the lightly warm milk and vanilla extract and mix well, then add the sugar-activated yeast.
Place the grated lemon peel over the flour and then the liquid ingredients mixed beforehand, kneading the Easter dough with cottage cheese until a bubble forms, then add the melted butter, continuing to knead until the soft and supple dough is formed, as the cake one. Form it into a ball and leave it to rise for at least an hour.
In this type you can make the filling for Easter with cheese and raisins starting from hydrating the raisins with rum. You can pass the cheese through a sieve and add the rest of the ingredients in it, mixing very well until it catches a creamy texture. At the end you can also introduce the raisins in this component.
When the Easter dough with cheese and sour cream has risen, take two parts and shape them into balls, from the rest of the dough making the border in the desired way, by forming rolls and knitting in two, three or five.
Of the two pieces taken separately, one extends in a round shape to include the baking tray in which it is placed and the other is made of a cross. On that edge, place that braided roll (border) and press it to "glue" the doughs together. Cover this part of Easter with cake dough and let it rise a little, setting fire to the Zanussi stove oven or the brand you have.
After the oven has heated to 180 degrees, pour the filling over the dough and grease the crown on the edges with the mixture of egg yolk and water and put it in the oven, where you leave the easter with cream and cheese for 20-25 minutes, then put the dough on top. form the turkey, grease it with egg yolk and return to the heat for 25 minutes. It is recommended to bake the preparation for 50 minutes in total.
At the end, take the Easter cake out of the oven and let it cool before consuming.
Alternatives to the classic recipe are chocolate Easter, which uses chocolate cream with sour cream, yogurt or cheese as the filling, Easter with chocolate and sour cream or with cream and egg white.
