Recipe Check with caramelized nuts
Dear ones, didn't you miss a cake recipe? :))) I'm not a fan of cake, but I like it. She goes for coffee in the morning 😀 but in the end, if you ask me, I prefer a homemade cake with cream, chocolate, whipped cream… However, because the children like it and because it is very suitable for the school package, I try to offer them various variants 😉 So, today we have a cake with caramelized nuts 😉

- 4 eggs
- 4 tablespoons powdered sugar
- 2 tablespoons oil
- 4 tablespoons flour
- vanilla essence
- 1/2 teaspoon baking powder
- Caramelized nuts:
- ~ 100 g walnut kernels
- 75 g old
Preparation Caramelized nut cake:
Melt the sugar over low heat. When it has become liquid, add the walnut kernels and mix quickly, so as to cover all the walnuts with caramel. Pour over a piece of baking paper and leave to cool, then put them in a thicker bag and beat with a hammer until they crumble.
Separate the egg whites from the yolks. Beat the egg whites with a pinch of salt, at the maximum speed of the mixer. When the foam has hardened well, add the powdered sugar and mix until the foam becomes dense and shiny and holds well to the blender blades. Separately rub the yolks with the oil and vanilla essence, until we obtain a stable emulsion. We pour this emulsion over the egg whites.
We turn the mixer to the lowest speed and we easily homogenize the composition. Sift the flour together with the baking powder over the egg composition. Put the mixer aside and mix everything with a spatula, lightly, with movements from bottom to top. At the end, add the caramelized walnuts and mix well.
Pour the composition into a cake pan lined with baking paper and bake on medium heat for about half an hour, until the cake is lightly browned and passes the toothpick test.
Remove the cake on a grill, along with the baking paper, and leave to cool. After cooling, remove the baking paper and slice as desired.
