  • For the cream:
  • 6 eggs

  • 2 tablespoons oil
  • 1 teaspoon baking powder

  • For caramel:
  • 5 tablespoons sugar

Preparation Cake with burnt sugar cream:

Caramelize the 5 tablespoons of sugar in the pan (22 cm in diameter) in which we will prepare the cake. When the sugar has become liquid and has acquired a beautiful golden color, set it aside from the heat and spread evenly on the bottom of the pan and a little on the side walls. Leave to cool.

Beat eggs with sugar, add starch, then milk mixed with vanilla essence, little by little, stirring constantly. The obtained composition is poured into the pan over the caramel and put in the oven over medium heat, until the cream begins to thicken.

In the meantime, I'm preparing the countertop. Whisk the egg whites with a pinch of salt. Add the sugar and continue mixing until you get a glossy foam like meringue. The yolks rubbed with oil and vanilla essence are poured over the meringue and incorporated easily, then we put the flour mixed with the baking powder.

Lightly pour the composition over the burnt sugar cream, lightly coagulated and put it back in the oven until the top is browned.

Remove the pan from the oven and allow to cool. We put a plate over the pan and with a firm movement we turn the cake over, without lifting the pan at all. Leave to cool, then refrigerate preferably overnight, if not, at least a few hours.

The cake can be served as such or garnished with whipped cream.
