Cake with mascarpone and strawberry creamq

I didn’t have much time these days for sophisticated cakes, but I said to make at least one cake for the children. And because June 1st, their birthday, of all the children, is approaching, I gave it a festive air. A light mascarpone cream and a few strawberries sprinkled with chocolate will always make a difference 😉

ingredients

  • For the cake:
  • 100 g butter
  • 100 g sugar (powder)
  • 2 eggs
  • 200 g flour
  • 1 teaspoon baking powder
  • 125 ml milk
  • vanilla essence
  • 1 tablespoon cocoa
  • For mascarpone cream:
  • 150 g mascarpone
  • 200 ml whipped cream
  • 75 g old
  • vanilla essence
  • For decoration:
  • strawberries

We partially melt the butter, then mix it well with the sugar, vanilla essence and a pinch of salt. We break the eggs in a bowl and mixing continuously we put them one by one in the butter cream. I mixed well after each one.

We mix the flour with the baking powder and incorporate it in the composition, alternating with the milk from which we left aside 2 tablespoons.

Divide the composition into two approximately equal parts 🙂 In one of them we put cocoa and the remaining 2 tablespoons of milk.

In the tray (18 cm diameter) lined with baking paper we put the composition for the cake. Starting from the center of the tray, we alternate the 2 compositions, a spoon of white composition, a spoon of cocoa composition…

Put the tray in the oven over medium heat (150 degrees in an electric oven with ventilation) for about 40 minutes, until the cake passes with the toothpick. Remove the cake on a grill and leave it to cool, along with the baking paper.

Mascarpone cream:

Mix the whipped cream until it starts to take on consistency. Add 1 tablespoon of sugar and mix until the cream becomes fluffy. It is not necessary to be stiff, just to be fluffy.

The mascarpone is mixed with the rest of the sugar and vanilla essence, enough to homogenize.

Mix the 2 compositions and mix well until you get a firm cream.

  • If you want, you can add a few diced strawberries to the cream and drain well

With this cream we decorate the cake.

Put a few strawberries on top, sprinkle with melted chocolate and you’re done! :)))
