I got this cake recipe with white chocolate and caramelized nuts from a good family friend, from the family's cake recipe book . A complete cake I would say, which has all the best in one place: chocolate, walnut and caramel. Try it and you will be convinced. 😉
- For the countertop:
- 5 egg whites
- 100 g sugar
- 200 g ground walnuts
- 4 tablespoons flour
- 1 baking powder
- 200 g white chocolate
- For the cream:
- 150 g sugar
- 200 g butter
- 6 yolks
- 200 g crushed walnuts
- 100 g dark chocolate
- 50 ml liquid cream
- 50 g butter
Preparation Cake with white chocolate and caramelized nuts:
Whisk the egg whites with a pinch of salt. Add the sugar and beat until you get a hard and shiny foam, like meringue. We mix the flour with ground walnuts and baking powder, then we incorporate it lightly in the egg white foam, mixing lightly with a spoon, with movements from bottom to top.
The obtained composition is poured into a tray (25/35 cm) lined with baking paper and put in the oven over medium heat, until lightly browned on top, about 30-35 minutes. Remove the top on a grill and leave to cool.
Place the grated white chocolate on top of the cooled top on the grater with large meshes.
The sugar is caramelized over low heat. When it has become liquid and golden in color, set aside and add the diced butter. Mix lightly (pay attention to steam), put it back on the fire and stirring constantly, boil until the composition begins to thicken. Add the yolks one by one, mixing well after each one. The composition will thicken, reaching the consistency of sour cream. Add crushed walnuts (not ground).
Homogenize, let it cool a bit and pour the cream over the counter. We put it in the fridge.
Melt the chocolate in the microwave together with the butter and liquid cream. Homogenize, leave to cool and pour over the cake. The chocolate can also be melted over a low heat or in a baine-marie, as everyone prefers.
Refrigerate for 2 hours, then portion.
