I was thinking the other day about my dear friend Ruxy… and her pies with cheese and cumin… and how she expected me with hot pies at the train station, when I went to Bucharest… darling of her… And that's how I made these pies … Of longing and lust… :))
Because I took these very beautiful dishes that you don't take off from me (yes, yes sa there will be other recipes in Ramekin dishes :)))) I made them like this, but you can adapt them according to the dish what you have available.
~ 500 g flour
2 teaspoons salt
10 g dry yeast
1 teaspoon sugar
2 tablespoons olive oil
250 ml milk (or water)
Mix the yeast with the sugar, then liquefy with a few tablespoons of warm milk.
Put the flour in a bowl, make a hole in the middle and pour the yeast. The rest of the milk mixed with the oil and salt is poured into the bowl over the flour. Knead an elastic and non-sticky dough, which is left to rise until it doubles in volume.
The dough can also be prepared in the bread machine, the kneading and leavening program.
For the filling:
300-400 g of cottage cheese
1 teaspoon cumin
salt and pepper
The cottage cheese is mixed with eggs until a fine cream is obtained. Add the cumin, salt and pepper to taste and mix.
The raised dough is turned over on a lightly floured table and spread in a sheet about 0.5 cm thick. Cut dough circles with the mouth of a glass or with a special round shape to cut the dough. We put a circle of dough around the ceramic vessel well greased with oil, so as to cover the bottom of the vessel.
Fill the forms with cream cheese, put a cherry tomato on top
and put in the oven over medium heat, until lightly browned on top.
