These cheese and leurda rolls were my way of making friends with my little leurda. I wouldn't put my hand in the fire because I succeeded :)))) but at least I was satisfied that they ate, even if the cheese was "with something green" :))))
- It took:
- 510 g flour
- 7 g dry yeast
- 200 ml of milk
- 2 eggs
- 2-3 tablespoons olive oil
- 75 g butter
- 1 teaspoon salt
- 1/2 teaspoon sugar
- ~ 200 g telemea
- 1 or
- a few threads of leurda
- salt and pepper
- a few hot pepper flakes
Preparation Cheese and leurda rolls:
Put the flour in a bowl and mix it with the dry yeast.
Heat the milk in a saucepan, add salt, sugar and butter. Stir until smooth.
Make a hole in the middle of the flour, add eggs, olive oil and milk and knead until you get a homogeneous dough. Cover the bowl with cling film and leave to rise until it doubles in volume.
- The dough can also be prepared in a bread machine.
In a bowl, mix the crushed cheese with the finely chopped leurda, the egg, salt and pepper to taste and a few hot pepper flakes.
The leavened dough is spread on the table greased with a little oil in a rectangular sheet of about half a centimeter. Place the cheese over the dough sheet in an even layer, then roll as tight as possible.
The obtained roll is cut into pieces of the right size, using a thread. We put the thread under the roll, then as if we were making a knot we cut the rolls.
Place the pieces of roll in a tray lined with baking paper and leave in a warm place to increase the dough.
Then put the pan in the oven over medium heat until the rolls are browned.
