Ever since I accepted the invitation of my friends from Schar and celiaci.ro , to participate in a campaign with a generous theme, namely “We cook Romanian and gluten-free with Schar”, I was curious to test the gluten-free products.
Gluten intolerance exists, and it is quite a challenge to find healthy alternatives, but just as tasty as in the case of products made from wheat flour, for example.
Temptations do not make the situation easier, especially since we are assaulted from all sides, with all kinds of food, dishes that test our appetite or endurance.
In some cases, it is not at all healthy to choose, for example, commercial pastries. And with and without intolerance, I think they are real bombs, but I think it depends on everyone’s choice.
I always prefer a horn or a pie prepared at home, not to mention the donuts I meet everywhere, fried in an oil bath that stagnates for many days in a row.
Finally, the alternative to these and many other temptations is brought by Schar , through the wide range of products, starting from special yeast, gluten-free flour, gluten-free pastes, very tasty biscuits, just as gluten-free, to pasta and other products.
I prepared a noodle soup , made of gluten-free flour, I mentioned in that recipe, I repeat it even now, they turned out extraordinarily good and that, without any difference in taste.
But now, I’m thinking of delighting you with a healthy portion of Moldovan pap .panişi.
But, as opinions are more than divided on the name, I tell you from the beginning that we prepared papanas in the version we all know, namely, fried, garnished with cream and jam and in the boiled version, rolled in breadcrumbs. flavored with cinnamon and brown sugar.

- 400 g of cottage cheese
- 2 eggs
- 100 g raw sugar
- 200 ml water / fresh milk
- organic lemon peel
- 1 sachet of gluten-free yeast Lievito Secco
- 600 gr flour Mix C Schar
- 300 gr berries
- 3 lg bee honey
- frying oil
- 200 gr gluten-free breadcrumbs Pan Grati
- 60 gr raw sugar
Put the cottage cheese in a bowl. Depending on how dry or creamy it is, the amount of flour used may vary. For starters, you can use 1/2 kg of flour, then if necessary, as happened in my case, supplement with 50-100 g of flour.
Over the cheese, add the raw sugar, eggs, lemon peel. Mix well, add the sweet milk and mix the cheese composition.
The flour is mixed with the contents of the yeast package, then added over the cheese. Incorporate and knead a dense, but malleable and non-sticky dough. Cover with a clean towel, leave to rise in a warm place.
After the dough has risen nicely (see in the picture how beautiful it has risen, what texture it has), it is turned over on the floured work surface. Half of the dough is spread in a 2-3 cm thick sheet, cut the right discs, then cut in the middle, and the cap is handled in the hands, giving it a spherical shape. Leave on the worktop or parchment sheet for another 20 minutes. I opted for the parchment sheet.
The other half of the dough is portioned and formed into small spheres / balls that are also left on the parchment sheet, until it comes to a boil, in boiling water. Separately, in a wok or cauldron, heat the bath. oil in which the papanas will be fried.
Heat very well, then fry in turn, papanasii. With the help of the frying pan, sprinkle with oil from the pot, so it swells nicely and bakes better. Remove on a paper towel so that the excess oil can be absorbed.
Leave to warm. Then garnish with sweet cream and berry sauce.
Separately, in a bowl, mix the breadcrumbs with cinnamon and raw sugar. Set it aside.
The other papanas are boiled in a pot of boiling water, left for 2-3 minutes, then removed in a bowl and rolled in flavored breadcrumbs.
Tasty in both variants, easy to prepare and extraordinarily successful if I used gluten-free flour!
