I recently learned from the ophthalmologist that blueberries help a lot and vision, in addition to the other benefits on the body. So, when I found it in the market at a reasonable price I bought a larger quantity. I ate some of them fresh, and from what was left I made blueberry syrup . At about 800 g of blueberries I put about 400 g of sugar, I put them in layers in a plastic can and I left it for about 2 days, until the blueberries left their syrup. I strained and stored in a bottle in the refrigerator 😉 That's how we have fruit juice, good and healthy!

To the remaining fruits I added about 2 tablespoons of sugar, then I boiled them until it started to bind. Obviously I had the best blueberry jam! :))

I used some of this jam for the cheese tart I brought for you today. If you have the courage to turn on the oven :)) and you will do it soon you will enjoy a good good cake, if not… don't bathe you do it when it is cooler, especially since you can use another kind of jam, not necessarily blueberries.

Ingredients:

  • For the dough:
  • 100 g butter
  • 200 g flour
  • 2 tablespoons powdered sugar
  • 1 pinch of salt
  • vanilla essence
  • 1-2 tablespoons cold water
  • For the filling:
  • 150 g Almette cream cheese
  • 2 tablespoons powdered sugar
  • 40 g butter
  • vanilla essence
  • blueberry jam or any other jam you will like

Preparation Tart with cheese and blueberry jam:

It took:

Put flour, powdered sugar and salt powder in a bowl and mix. Add the diced (cold) butter and start kneading with your fingertips until you get dough crumbs. Then add the vanilla essence and cold water, little by little, enough to bind the dough, to obtain a firm and non-sticky dough ball. Let cool until the filling is ready.

Filling:

We mix the cream cheese with powdered sugar and soft butter, not too much, just to get a homogeneous cream. Flavor with vanilla to taste.

Take the dough out of the fridge and spread it in a thin, round sheet directly on the baking paper. We put the cream cheese over the dough, taking care to leave an edge of a few centimeters. Cover the cream cheese with a generous layer of cranberry jam. Then lift the edges of the dough over the filling forming a border.

Put the cheese tart in the oven, over medium heat, until the dough is lightly browned. Allow to cool, then portion as desired.
