I regularly buy cow's cheese for children. And periodically I have cow's cheese left in the fridge :)) And then I have to somehow capitalize on it and make a homemade pie or cake .

Although I made this cake some time ago, I kept thinking about how I saw it again at Gabi's . :)) I gathered my ingredients and got to work…

Ingredients:

  • For the countertop:
  • 50 g black cocoa
  • 150 ml water
  • 6 eggs
  • 150 g sugar
  • 120 ml oil
  • 280 g flour
  • 1 teaspoon baking powder

  • For the cheese balls:
  • 400 g of cottage cheese
  • 100 g coconut
  • 100 g sugar
  • 2 yolks
  • 4-5 tablespoons starch
  • For the glaze:
  • 150 g dark chocolate
  • 100 ml whipped cream
  • 50 g butter
  • 1 tablespoon brandy

Preparation Cheesecake cake:

Wheat:

Put cocoa in a bowl and pour boiling water, stirring constantly. Mix until all the lumps disappear and obtain a composition of oil consistency. Let it cool.

Whisk the egg whites with a pinch of salt. Add half the amount of sugar and mix until you get a shiny meringue. Rub the yolks until they become like a cream with the other half of the amount of sugar. Gradually add the oil, rum essence, then the composition with cooled cocoa. Mix lightly, like mayonnaise. Incorporate the flour mixed with the baking powder and at the end (in a few installments) the meringue.

Cheesecake with coconut:

The cheese is mixed with the sugar. Add the yolks, one at a time, mixing well after each one. Then add the coconut and starch. We need to get a composition that can be shaped. With wet hands, the bulbs are formed.

Place in a tray (42/29 cm) lined with baking paper, then cover with the dough for the countertop.

Place the pan in the oven over medium heat for about half an hour. The toothpick is tested.

Chocolate glaze:

Melt the chocolate over low heat together with the whipping cream and butter. Bring to the boil, set aside and mix. Allow to cool, add a tablespoon of brandy, then pour over the cake. Spread evenly and sprinkle a few chocolate balls.

After complete cooling, portion as desired.
