Happy Birthday! Good luck in 2021 to everyone! As always, I wish you good health, because if you are healthy, you can achieve everything you want! Otherwise it will be a better year for everyone and we can see our loved ones.

Our New Year's cake was one with a lot of lemon, but definitely my favorite. I was very happy, especially since I love citrus sweets, but it exceeded all my expectations. It passed on my list of favorites and I will prepare it more often, it will be my treat now!

Ingredients:

For the countertop:

  • 5 eggs
  • 5 tablespoons sugar
  • 5 tablespoons oil
  • 5 tablespoons mineral water
  • 3 tablespoons lemon juice
  • 8 tablespoons flour
  • 1 teaspoon baking powder
  • grated peel of a lemon
For the cream:
  • 3 yolks
  • 2 tablespoons sugar
  • juice of 3 lemons
  • grated peel from 2 large lemons
  • 1 box 390 gr condensed milk
  • 500 gr mascarpone
  • 1 teaspoon jelly
  • 2 clementines
  • 200 ml whipped cream
  • 1 tablespoon powdered sugar
  • 6 tablespoons limoncello liqueur for syrup

Method of preparation:
Separate the eggs.
Mix the egg whites with a pinch of salt until they become foam, then add the sugar gradually and mix until you get a meringue.
Add the yolks, oil and mix.
Add mineral water, lemon juice and grated peel.
At the end, incorporate the sifted flour and baking powder, with the help of a silicone paddle, with slow movements.

Divide the composition into 3 bowls evenly.
Wallpaper a 23 cm tray with baking paper, pour the first part of the composition and level it.
Put the countertop sheet in the hot oven at 180 degrees for 10 minutes.
Do the same with the other two. Let them cool.
You can also bake the whole top, as you wish.

In a saucepan with a thicker bottom, put the yolks with the sugar and mix them with the whisk.
Add lemon juice and grated peel, mix well.
Transfer the pan to the heat, let the heat simmer, stirring constantly until the cream thickens.
Cover when ready and let cool.
Gelate it with 4-5 tablespoons of cold water.
Pour the cold lemon cream into a bowl, together with the condensed milk and mix them.
Add the mascarpone and mix until you get a frothy cream.
Melt the gelatin on a steam bath, add it to the cream and mix until incorporated.

Peel the clementines and cut them into small pieces.
Place the first countertop sheet on the tray and a detachable ring around it.
Syrup with a little lemon liqueur, put 1/3 of the cream, level and put half of the cut clementines. Lightly press them with your finger in the cream.
Place the countertop again, syruped with liqueur, 1/3 of the cream and clementines.
Put the last sheet on the counter, syrups and the rest of the cream.
With a teaspoon, make some depressions in the cream, then let the cake cool for 3-4 hours or overnight.

Mix cold cream with powdered sugar until frothy.
Remove the cake from the cold, remove the detachable ring.
Cover the cake with whipped cream on the edge.
Decorate it with fir branches, a little edible golden glitter, golden pearls and whatever else you want!

PS: If you know that the children will also serve the cake, replace the liqueur with a lemon syrup.
