I really like mango fruit, but you only nibble on it if it’s hard. Instead, the very ripe fruit gives the desserts a pleasant aroma.

Ingredients:

  • wheat (shape 18 cm):
  • 250 gr digestive biscuits
  • 80 gr butter
  • 30 ml milk
  • mango cream:
  • 1 mango fruit (well ripened, soft, juicy)
  • 250 gr cream cheese
  • 4 – 5 lg condensed milk (thick)
  • 200 ml liquid cream
  • 8 gr gelatin (5 sheets)
  • decor:
  • cranberries
  • raspberry

Cheesecake with mango, without baking

Preparation

Put the butter and milk in a bowl and put them on the fire, melted. Stir gently until smooth.
The biscuits are finely ground with an electric shredder.
Biscuit breadcrumbs are mixed with melted butter. The composition of the biscuits is placed in an even layer in a baking dish. I used a round baking tin, 18 cm, with a removable ring. Bake for 10 minutes at 160 degrees C.

The gelatin sheets are hydrated in 200 ml of water. After hydration, the gelatin is heated on a steam bath until it melts.

Caution: DO NOT BOIL!

Separately, clean the mango fruit. The pulp of the fruit together with the cream cheese and condensed milk is passed finely with a blender. Add liquid cream and pass again until a frothy, fluffy composition is obtained. Add the gelatin and incorporate into the cream.
The obtained cream is poured in the baking form, over the biscuit top. Lightly tap on the table top, then transfer to the refrigerator, where it will stay until the next day.
After coagulation, loosen and carefully remove the removable ring. The cheesecake is garnished with berries, chocolate, etc.
It is a very creamy cheesecake, with a subtle mango flavor and very fresh!

Note:

If you like sweeter desserts, supplement the amount of sugar to your taste.

If you want an even stronger mango note, use two fruits instead of one.
