Cheesecake with strawberry jelly and mint syrup

Recently, our friends from Dulceata Gradinii , hardworking people who do everything with a lot of involvement, have celebrated 4 years since they prepare delicious wonders, from natural ingredients, from all kinds of fruits, vegetables and plants: syrups, jellies, jams, peltea, zacusca, donuts in sauce and many other goodies. Click on their page to convince yourself! We spent this anniversary together with a cheesecake in which we used products from them! Simple, delicious, to everyone's liking!

Ingredients:

  • 250 gr biscuits
  • 100 gr butter
  • 4 tablespoons mint syrup
For the cream:
  • 250 gr mascarpone
  • 150 gr cream cheese (delaco, almette, hochland)
  • 100 ml whipped cream
  • 6 tablespoons mint syrup
  • 1 teaspoon jelly
  • strawberry jelly
  • 3-4 biscuits an hour
  • 40 gr white chocolate + 30 ml cream for whipped cream
Method of preparation:
Crush the biscuits in the robot.
Melt the butter on a steam bath.
Mix the biscuits with the butter in a bowl, then incorporate the mint syrup.
Place a detachable ring with a diameter of 20-22 cm on a plate.
Pour the biscuit mixture over, press well with the bottom of a glass.

Let it cool as you prepare the cream.
Put in a cup of gelatin with 4 tablespoons of cold water and let it hydrate.
Mix the mascarpone with the cream cheese, then add the whipped cream.
Mix at low speed until the cream becomes frothy.
Stir in the mint syrup.
Melt the gelatin on a steam bath, add it to the cream and mix well.

Remove the biscuit base from the refrigerator.
Put about half of the cream, level it.
With a teaspoon, put strawberry jelly in pieces, then break the oreo biscuits and place them among the jelly.
Top with the rest of the cream, level it and let the cheesecake cool for 3-4 hours.

Melt the white chocolate on a steam bath together with the whipped cream.
Remove the dessert from the fridge after it has been cold enough, remove the detachable ring.
Lightly pour the white chocolate icing, then let it cool again for half an hour (I left it for only 10 minutes and the chocolate was not well hardened when I decorated it).
Garnish it with strawberries, oreo biscuits and whatever else you want.
