Cheesecake without baking or cold seemed to me a very good idea and very much loved by me. I think it's an ideal recipe for everyone. Even for the less experienced in the kitchen. Many times people complain that they do not cook as they should.
Here is the summer version, simple and accessible for everyone. Use your favorite fruits or the ones you have left in the fridge.
For the crust:
120 gr biscuits and oats
50 gr fragile biscuits with macha and almonds (optional)
50 gr melted butter
2 tablespoons milk
For the cream:
250 gr cream cheese
100 gr white sugar
4 well ripened apricots
1 sachet Agar Agar (5 gr) +50 ml water
200 ml whipped cream
For the jelly above:
2 finely chopped apricots + 2 tablespoons Agar agar used for filling
2 tablespoons white sugar
Method of preparation
For the biscuit crust: the biscuits with macha and almonds I had made for about a week. I mixed them with oatmeal cookies just for rum. No need to use them…
Break the biscuits and put them in a robot. Give a few pulses until the biscuits are crushed. Add melted butter, milk and mix. Put the mixture in a tray with a removable ring (18cm), grease the base with a little butter or oil. Level with a spoon in a uniform start. Let cool until the filling is ready.
For the cream: cut the fruit in half, remove the seeds. Put in a blender and make a fine fruit puree. Put the fruit in a saucepan, add the sugar and place on the low flame of the stove. Leave for 5 minutes after the composition has started to boil.
Agar The agar is hydrated in water for 5 minutes. After hydration, put it in the pan in which the apricot puree boils.
Leave it on the fire for another 5 minutes and stir constantly in the pan so that it does not stick to the bottom of the pot. We are working on the smallest flame of the stove. Allow the composition to cool until warm. We stop 2-3 tablespoons of puree for the jelly that comes on top.
The cream cheese is mixed with a pear type. This time I didn't use a cottage cheese like I do when I make a baked cheesecake. I used a very fine cream cheese (found at Kaufland).
The whipped cream is mixed until it reaches consistency. Mix whipped cream with cream cheese. Add the fruit puree, mix thoroughly until the ingredients are incorporated. Put the cream over the crust removed from the fridge. Refrigerate the cheesecake tray for 30 minutes.
For the jelly: cut the 2 apricots into cubes with a knife. Mix with the 2-3 tablespoons stopped before the puree. Add 1-2 tablespoons of sugar and 2 tablespoons of water. Stir until the sugar is dissolved. Put the jelly over the cheesecake and distribute it evenly with a spoon. Let cool for 2-3 hours.
