I managed to prepare another wonderful sugar-free cake! The combination is very fine: cocoa tops, cocoa spread, cherry cream and whipped cream! What will it sound like? Do you love it? It is a perfect cake for festive meals or even to pamper your loved ones! It can also be made with sugar, this is your choice!

Ingredients:

For the countertop:

  • 5 eggs
  • 5 tablespoons sweetener powder (Green Sugar I used)
  • 4 tablespoons oil
  • 125 gr yogurt
  • 2 tablespoons cocoa
  • 7 tablespoons flour
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla
Cherry cream:
  • 1 jar 300 gr with pitted cherries (or frozen)
  • 2 tablespoons full of starch
  • 6 tablespoons sweetener powder
  • 500 gr mascarpone
  • 200 ml whipped cream
  • 1 tablespoon sweetener powder
  • cocoa and sour cream spread with sweetener

Method of preparation:
Separate the eggs.
Mix the egg whites with a pinch of salt.
Gradually add the sweetener, mix until you get a firm foam.
Mix the yolks with the oil, pour them over the egg whites and mix.
Add the yogurt, vanilla and mix for the last time.
Sift cocoa flour and baking powder into a bowl.
Gradually incorporate them, mixing with a spatula, in slow motion.

Divide the composition into two bowls, evenly.
Wallpaper a 24/37 cm tray with baking paper, pour the first countertop composition, level it.
Put it in the hot oven, at 180 degrees, for 12 minutes.
Do the same with the second sheet.
You can bake the whole countertop at once, then cut it in half.
Allow the countertop sheets to cool.

Cherry cream:
Put the cherries in a blender and mash them.
Turn them over in a saucepan, put the sweetener.
Transfer the pan to the heat, simmer for two minutes.
Dissolve the starch with 3-4 tablespoons of cold water, pour it over the cherries.
Always mix with a whisk until the jelly thickens.
Set it aside, cover it and let it cool.
Mix the cold mascarpone for 1 minute, then add the cold cherry jelly, in two stages, mixing each time.

In the tray in which you baked the countertop, put baking paper, place the first sheet of countertop.
Grease it with 3 tablespoons of cocoa spread, put half of the cherry cream and level it.
Grease the second sheet with cocoa cream, then place it over the cherry cream, but with the spread side spread with cream.
Put the rest of the cherry cream, level it.
Cold cream for whipped cream mix for two minutes on low speed.
Add the powder sweetener, mix until you get a frothy consistency.
Put the whipped cream on top and level it.
Make a model with a kitchen comb.

Sprinkle decorations.
Cool the cake, then portion it and serve.
