A simple, delicious and fluffy cherry cake . Of course, cherries can be replaced with any other seasonal fruit.
- * 4 eggs
- * 100 g sugar
- * 2 tablespoons oil
- * 4 tablespoons top with flour
- * 1 teaspoon baking powder
- * vanilla essence
- * 300 g cherries
- * a few cherries for decoration
Preparation Cherry cake:
Whisk the egg whites with a pinch of salt. Add the sugar and vanilla essence and mix until you get a glossy meringue.
Mix the yolks with the oil, put a little, like mayonnaise. Pour over the meringue. If the meringue has the correct consistency, the mixture will remain on the surface.
Incorporate easily, then add flour mixed with baking powder.
We pour the composition in a tray (24 cm in diameter) lined with baking paper. Put the cherries sprinkled with a little flour on top
and put in the oven over medium heat until lightly browned on top.
Leave to cool in the pan, then turn over on the plate and powder with sugar.
For decoration , we pass the cherries with their tails through a little beaten egg white, then through sugar. Hang on a rod and leave to dry.
