A cake with such good cherries … With fluffy top and sweet sour taste… mmm… is irresistible.

I used cherry compote… Eheeee, daaa… I also made cherry compote :))) But you can also use fresh fruit, it will be much more fragrant and stay with some compote for the winter :)))

  • 1 jar 800 g cherry compote
  • 4 eggs
  • 4 tablespoons sugar
  • 2 tablespoons boiling water
  • 2 tablespoons oil
  • 4 tablespoons flour
  • vanilla essence

Preparation Cake with cherries:

The cherries are put in a sieve to drain the juice and the seeds are removed.

The yolks are mixed with the sugar and vanilla essence until they turn white and become like a cream. Then add, in turn, the oil and boiling water, mixing well after each one. Sift the flour and incorporate it into the egg cream. Beat the egg whites with a pinch of salt, then incorporate them into composites, mixing lightly with a spatula, with movements from bottom to top.

  • For baking I used a stainless steel pan, with a diameter of 20 cm. Use a dish that you are sure not to stick to or line with baking paper for safety

Line the bottom of the pot with the cleaned cherries and drain the juice. Pour the top composition over it

and bake on medium heat for 30-35 minutes, until it passes the toothpick test.

Remove the cake from the oven and leave it to cool in the pan. When it has cooled very well, turn it over on a plate, put the plate on top of the pan and turn it with a firm movement.

It can be served as such or garnished with whipped cream.
