* 1 kg of potatoes
* 1 onion
* 1 or
* 1 teaspoon of salt
* 150 g flour
* salt and pepper
* Paprika
* green parsley

From the egg, flour and salt, knead a dough like a noodle, elastic and non-sticky. From the formed dough, small pieces are broken, pressing the piece of dough between the thumb and forefinger, giving it an approximately oval shape. Put them to boil in salted water and boil for 5 minutes, until they rise to the surface. Put in a strainer and keep warm.

Peeled potatoes are cut into small cubes and boiled in water with a little salt. When they are cooked, they drain from the water.
Cut onions as finely as possible and cook in a little olive oil. when softened, set aside, add salt and pepper to taste, paprika, potatoes and dumplings, along with finely chopped greens.
Mix well and serve hot.
