For the holidays I thought of preparing a delicious chicken salad, which I decorated with a nice Santa Claus.
4 boneless chicken legs
1 red bell pepper
1 yellow pepper
1 jar sliced mushrooms
1 slice of celery
a tablespoon of mustard
¼ red pepper
¼ yellow pepper
Egg white (boiled for mayonnaise)
Method of preparation:
Boil the chicken legs, leave to cool, cut into cubes and place in a bowl. Rinse the mushrooms, drain well and cut into cubes. Cut the olives, peppers and cucumbers into cubes and add over the rest of the composition. Keep a few olives and a piece of fat and yellow pepper for decoration. Add the celery given on the small grater and Mix.
For the mayonnaise, use 2 egg yolks (one raw and one boiled) which are mixed and a little oil is added over them. To make sure that the mayonnaise is not cut, I advise you to mix in one direction. At the end add mustard and lemon to taste.
Add the mayonnaise over the rest of the composition, add salt to taste and mix gently. I kept 2-3 tablespoons of mayonnaise and spread them over the salad, after transferring it to a bowl.
For decoration, cut pieces of red pepper and boiled egg white and make Santa's hat and clothes. Olive is made of Santa's eyes, belt and boots. Santa's face and hands are made of yellow pepper. Arrange the ingredients so that you get Santa Claus. For the globes I used a cap from a pen.
