- 1 carrot
- 1 onion
- 2 tablespoons quinoa
- 300 gr fresh spinach
- 1-2 tablespoons oil
- 1 tablespoon pepper paste
- 150 ml mashed tomatoes
- ground black pepper
- green parsley
Method of preparation:
We clean the carrot, wash it and cut it into thin slices.
We clean the onion, wash it and finely chop it.
Put the oil in a pot and add the carrot and a little salt.
Cover with a lid and simmer, stirring occasionally until it begins to soften slightly. Add fine onions. When the onion has become translucent, quench it with 1 l of water.
Let it boil for 10 minutes, then add the well-washed and drained quinoa.
Add the pepper paste, the tomatoes, and after 15 minutes we put the spinach that we washed well and cut it into small strands.
Season with salt and pepper and let it boil for another 5 minutes or, depending on how tender the spinach is, adjust the time.
Turn off the heat and add the green parsley.
