A chicken soup with vegetables that is mandatory at our lunch. It is a simple recipe that can be modified according to everyone's preference.
- chicken (I put 3 big upper thighs)
- 2 onions
- 1 carrot
- 1 parsnip
- 1 piece of celery
- 1 parsley root
- green parsley
- Kotanyi dried parsley
- dry marar Kotanyi
- salt and pepper
Preparation Chicken soup with vegetables:
Boil the thighs, froth the juice a few times and let it simmer.
The cleaned and washed roots are added whole in the pan, when the meat is half cooked.
When the meat and vegetables have boiled, remove them from the soup and strain the latter. Pass the vegetables in a blender, without the onion being thrown away. Put the soup on the fire again, add a little hot water, if we consider that it is too concentrated and when it boils again, add the vegetable puree and mix well.
Salt and pepper to taste and add the noodles, dried parsley and dried dill. Boil for a few more minutes and before turning off the heat add the chopped green parsley.
