How about a cold summer soup? It does not require baking, so we get rid of the heat of the stove. Such a cream soup can only be comforting, full of vitamins and healthy. Let's not forget that it must be delicious. I guarantee it will be woooow !! It surprises you at the same time, but you it also satisfies the taste buds. It perfectly resembles the Bulgarian Tarator soup, which is made in the same way, but without avocado. I ate such a soup on a vacation in Bulgaria and it won me over. It is easy to prepare, all you need is a blender and a few ingredients. The soup can be served plain, with a mixture of seeds (I preferred only walnuts), or with a tomato sauce (a mix of diced vegetables). Everything is flavored with dill and olive oil. I used salad oil from Sano Vita .
3 garden cucumbers
2 well-baked avocados
Pink salt to taste
A few dill threads
Freshly ground pepper
3-4 tablespoons Greek fat yogurt
1 garden tomato
Hot peppers to taste
1 small onion
Salt, pepper, dill, salad oil
Method of preparation
Peel a squash, grate it and cut it in half. Cut into slices, put in a robot / blender and sift. Cut the avocado in half, remove the seeds, remove the core with a teaspoon and put in a blender. Sprinkle avocado with a little lemon juice and grind everything on the robot.
Add the fatty yogurt, salt and pepper and mix with the robot. To thin the cream we add water or milk (I used rice milk). If you like dill, you can cut a few leaves into small pieces and mix it with cream soup. If it is not to your taste, use it only for decoration.
Cut the tomato into cubes, clean the onion and cut it as small as possible, as well as the hot pepper. Put the vegetables in a bowl, add salt and pepper to taste and 1 tablespoon olive oil or salad oil.
Serve the soup with the vegetable or walnut mix. Sprinkle a few drops of oil on top and decorate with dill leaves. You can also cut pieces of avocado or cucumber for decoration … Enjoy! With love!!
