  • Wheat
  • 5 egg whites
  • 150 g sugar
  • 200 g butter
  • 250 g ground walnuts
  • 40 g cocoa
  • 100 g flour
  • 1 baking powder
  • esenta de rom
  • Glaze:
  • 5 yolks
  • 150 g sugar
  • vanilla essence
  • chocolate for sprinkling on top

How to prepare Chinese cake:

The soft butter at room temperature mixes well with the sugar and rum essence, until it becomes like a cream. Add ground walnuts, then flour mixed with baking powder and cocoa.

Whisk the egg whites with a pinch of salt, then gradually incorporate them into the butter composition, mixing gently with movements from the bottom up.

The obtained composition is placed in a tray (20/30 cm) lined with baking paper and put in the oven over medium heat for about 20 minutes.

The yolks are mixed with sugar and vanilla essence, until they become white, like a cream and have almost doubled in volume. Pour over the baking sheet, level and put back in the oven until the icing hardens and begins to brown, about 10 minutes.

Leave to cool in the pan, then portion and sprinkle with grated chocolate.
