It's been a while since I've made a cake. I made a little order through the product closet and found some chocolate with sweetener, so I thought I would not leave it there and do something good with it. I said I was making a cake, a tart, but I came up with a cake. It turned out wonderful, without sugar, and the dark chocolate cream with the berry cream combined perfectly. I also used products from Green Sugar .

Ingredients:

For the countertop:

  • 5 eggs
  • 5 tablespoons sweetener powder
  • 4 tablespoons oil
  • 3 tablespoons lemon juice
  • 5 tablespoons flour
  • 1 teaspoon vanilla
  • grated lemon peel
  • 1 teaspoon baking powder
For dark chocolate cream:
  • 150 gr dark chocolate with sweetener
  • 50 ml whipped cream
  • 250 gr mascarpone
  • 2 teaspoons vanilla
For berry cream:
  • 150 gr white chocolate with sweetener
  • 50 ml whipped cream
  • 250 gr mascarpone
  • 250 gr berries
  • 1 tablespoon sweetener powder
  • 1 tablespoon starch
  • 5 tablespoons full raspberry jam with cherries and sweetener
  • 250 ml whipped cream
  • 2 tablespoons sweetener powder
  • 1 teaspoon vanilla
  • vanilla syrup (water + sweetener + vanilla)
  • blackberries
  • mint leaves
  • sugar-free chocolate pennies
  • raspberry pieces
Method of preparation:
Separate the eggs, mix the egg whites with a pinch of salt.
Add the sweetener and mix until the meringue is firm.
Add the yolks, mix, then the oil, vanilla, juice and lemon peel.
Sift the flour, incorporate it together with the baking powder, mix lightly with a spatula.
Divide the composition into two bowls evenly.
Wallpaper a 23 cm tray with baking paper, pour the first part of the composition, level it.
Put the countertop sheet in the hot oven at 180 degrees for 10 minutes.
Take it out of the oven when it is ready and bake the second sheet.
Let them cool.
You can also choose to bake the whole countertop and then cut it.

Dark chocolate cream:
Put dark chocolate and cream in a stainless steel bowl, melt it on a steam bath.
Set it aside and let it cool for 5 minutes.
Mix the mascarpone, then add the melted chocolate and mix until you get a frothy cream, but don't mix too much so it doesn't cut.

Cream of berries:
Mix the berries (thawed) in a saucepan with the sweetener and starch.
Transfer to the heat, stir constantly until thickened, then set aside and allow to cool.
Melt the white chocolate with sour cream on a steam bath, leave it to cool for 5 minutes.
Mix the mascarpone, then add the melted chocolate and mix lightly.
Add the cold berry mixture, mix until incorporated.

Place the first countertop sheet on a tray and a detachable ring around it.
Syrup it a little, then grease the top with jam.
Add the dark chocolate cream, level it. You should put the cake in the fridge for 30 minutes now, but I'm over this stage.
Put the padue cream, lightly level it, then the second sheet of countertop that you syrup.
Let the cake cool for 3-4 hours or overnight.

Mix the cold cream until it starts to take on a little volume, add the powdered sweetener, vanilla and mix until it becomes frothy.
Remove the cake from the cold, remove the ring.
Cover the cake with whipped cream.
I chose to garnish it with frozen blackberries, chocolate pennies, mint, raspberry pieces and a little edible glitter, and I made some whipped cream from the whipped cream.
