A chocolate cake that I think will please any chocolate maker :))

  • * For countertop:
  • * 8 egg whites
  • * 300 g sugar
  • * 250 g ground walnuts
  • * 4 tablespoons flour
  • * 3 tablespoons cocoa
  • * 1 teaspoon baking powder
  • * For the cream:
  • * 8 yolks
  • * 3 tablespoons cocoa
  • * 250 g sugar
  • * 2 tablespoons milk
  • * 100 g dark chocolate
  • * 250 g margarine Rama Maestro
  • * For the glaze:
  • * 100 g dark chocolate
  • * 50 ml liquid cream
  • * 50 g margarine Rama Maestro

Preparation Chocolate and walnut cake:


The egg whites are mixed with hard foam with the 300 g of sugar, as for meringue. Over the obtained foam we add flour mixed with baking powder, cocoa and ground walnuts.

Divide the composition into 3 equal parts. Bake 3 sheets in a tray (24 cm in diameter) lined with baking paper, in the oven heated to 180 degrees for about 15 minutes each.

The yolks are mixed with the sugar until they become like a cream and double in volume. Add cocoa and cold milk. We put the bowl in the baine-marine and when it starts to thicken we add the broken chocolate and the margarine.

Stir until melted and the composition is homogenous. Let it cool.

Melt the chocolate over low heat together with the whipped cream and butter. Bring to the boil, set aside and mix well. Leave to cool.

The cream is distributed between the sheets. Pour the chocolate icing over the last countertop and let it cool until it hardens, then decorate it according to your preference.
