- For sheets we need
- 6 egg whites
- 180 g powdered sugar
- 180 g ground walnuts
- For the cream we need:
- 6 yolks
- 100 g sugar
- 3 tablespoons cocoa
- 100 g butter
Preparation Chocolate bars:
Whisk the egg whites with a pinch of salt. Add the sugar and mix until the foam forms. 🙂 At the end, ground walnut.
Divide the composition in half and bake 2 sheets in a tray (20/30 cm) lined with baking paper, in the oven heated to 180 degrees for 20 minutes.
When they are ready, immediately pass a knife around the sheet, turn it over on a tray and carefully remove the paper. Put it on the grill to cool.
Rub the yolks with the sugar until they become like a cream. Add the cocoa and put it on the bain-marie, until it starts to thicken. Set aside and leave to cool.
Rub the butter and add the cooled cream, spoon by spoon.
I filled the sheets with 3/4 of the cream, I put the rest on top.
