For the countertop:

6 eggs
6 tablespoons sugar
3 tablespoons oil
6 tablespoons flour
1 baking powder
vanilla essence
Whisk the egg whites with a pinch of salt, gradually adding half the amount of sugar. Mix until the foam hardens and becomes shiny.

Beat the yolks with the remaining sugar until they turn white and become like a cream. Add vanilla. Sift the yolks into the yolks, add the beaten egg whites and mix thoroughly.

The dough obtained is divided into 4 and bake 4 sheets in a tray (18 cm in diameter) lined with baking paper. Bake for about 10-15 minutes, until the edges start to brown, and the sheet is golden.

Remove to a grill and leave to cool, without overlapping them.

For orange mousse:

2 yolks
100 g sugar
2 tablespoons starch
250 ml milk
juice from 1 orange (~ 100 ml)
10 g gelatin
250 ml liquid cream

Mix the yolks with the sugar until they turn white. Add the starch and mix well, so that it does not remain lumpy.

Boil the milk, then pour slowly into the above composition. Move everything back to the bowl in which the milk was boiled and put it on low heat, stirring continuously for a few minutes, until the composition thickens (without bringing it to a boil).

Remove the pudding from the heat, cover with foil to avoid the formation of pudding and leave to cool.

The gelatin is dissolved in the cold orange juice and left to swell, then fried for a few seconds in the microwave. Add to the slightly cooled pudding. Homogenize and refrigerate. Beat the whipped cream and then lightly incorporate it into the chilled pudding.

For greased countertops:

150 g dark chocolate
50 g butter
50 ml liquid cream

Melt the chocolate with the butter and whipped cream over low heat, without boiling. Set aside and mix, then leave to cool. It is divided into 3.

3 of the 4 tops are greased with cooled and slightly hardened chocolate.

In the tray in which I baked the countertops lined with food foil, put a countertop, part of the orange mousse. Repeat the operation with all the other countertops and cream parts.

Let cool for a few hours, preferably overnight. Pour on a plate and garnish with whipped cream, orange slices and chocolate curls.

I tasted the cake when visiting some friends dear to us and I don't have a section. I secretly managed to take some pictures :))), but they didn't turn out good. Maybe next time. 😉
