Like any mother with dwarfs at school, I often face the problem of the package. Okay, for the few hours spent at school, considering that breakfast is quite substantial, they don't need much, but at least I have to put a banana, a cookie or a cookie in my backpack. And then I decided to make them at home various cookies instead of cookies from the store, very nicely packaged 🙂
From the quantities below, about 45 biscuits come out, depending on how big you make them, enough for a few days of school, during which time you will keep them in a box with a lid 😉
- 200 g butter
- 150 g sugar (powder)
- 2 eggs
- 150 g dark chocolate
- 400-450 g flour
- 1 baking powder
- vanilla essence
How to prepare Chocolate Cookies:
The soft butter, left for a while at room temperature, is mixed with the sugar and vanilla essence until a fluffy cream is obtained. Then add eggs one at a time, mixing well after each, and a pinch of salt.
- Butter cream tends to "cut", but if you add eggs to the composition without turning off the mixer after each egg added you will avoid this situation.
After we have well incorporated the eggs in the composition, we add the flour mixed with the baking powder. Put the mixer aside and mix with a spatula.
- Depending on the type of flour used, it will need somewhere around 400 g, if necessary add as much as you can to obtain a soft composition that can be shaped, without sticking to your hands.
- You can replace the baking powder with 1 teaspoon of baking soda, but I personally liked the version with baking powder, even if the latter come out a little flatter
At the end we incorporate the chopped chocolate with the knife.
We break pieces of dough and shape them into balls. We place them in the stove tray lined with baking paper.
Bake on medium heat for about 20 minutes, until lightly browned on the "sole". Remove to a grill and leave to cool.
