Whenever I'm in a hurry and I want to do something good , the top of the Amandina cake is very helpful. It is made very easy and fast and is suitable for almost any kind of cream.

This is how it happened that last week when we were invited to some friends dear to us, I quickly made this cake with chocolate cream , because I just wasn't going to buy them from the confectionery :)))

Ingredients:

  • For the countertop:
  • 6 eggs
  • 6 tablespoons sugar
  • 3 tablespoons oil
  • 3 tablespoons burnt sugar syrup
  • 6 tablespoons flour
  • 1 teaspoon baking powder
  • 3 tablespoons cocoa

  • 200 g butter
  • 200 g chocolate cream like Finetti, Nutella
  • 100 g dark chocolate
  • 50 ml whipped cream
  • 2 tablespoons brandy
  • For the glaze:
  • 100 g dark chocolate
  • 50 g butter
  • 50 ml sour cream

Preparation Cake with chocolate cream:

Wheat:

For the burnt sugar syrup we will caramelize 2 tablespoons of sugar. We then "extinguish" the caramel with a little cold water. Leave to cool until the caramel dissolves.

Whisk the egg whites with the sugar and a pinch of salt, like meringue. The yolks are mixed with oil, rum essence and burnt sugar syrup. Pour everything over the meringue and mix gently.

Mix the flour with the baking powder and cocoa, then pour over the above composition. Homogenize, mixing lightly with a spatula.

Pour the composition into the tray (25/35 cm) lined with baking paper and bake over medium heat for about 30 minutes. Remove the top on a grill and leave to cool.

Chocolate cream:

Melt the butter, but not completely, to leave unmelted pieces, then mix until it freezes again. Add the chocolate cream, melted dark chocolate together with whipped cream and brandy. Mix until smooth.

The baked and cooled top is cut into 2. Put the cream on one of the tops, level and cover with the second top. Let cool until the cream hardens, then portion into cubes.

Chocolate glaze:

Melt the chocolate over low heat with sour cream and butter. Bring to the boil, set aside and mix well. Leave to cool then pour over the cake cubes. Let it cool again, then garnish with whipped cream.
