Good evening my dears! Here I come back after a long break, but I couldn't help but thank you for all the wishes you sent me today, wishes that filled my day and my soul with joy. I also wish all the best to all those who celebrated the name day today (and not only 😉) and I invite you, unfortunately, to a slice of chocolate cake .
- For the countertop:
- 3 medium eggs
- 3 tablespoons sugar
- 2 tablespoons oil
- 3 tablespoons flour
- 80 g Heidi bitter chocolate with salt 😉
- a teaspoon of baking powder
- 1 sachet of vanilla sugar
- For the cream:
- 250 g dark chocolate
- 400 ml cream for whipped cream / liquid whipped cream
- a few drops of rum essence
Preparation Cake with chocolate cream:
We will prepare the cream first, because it has to stay in the fridge for a longer time, preferably overnight. If you hurry, it's ok to put it in the freezer, it will take less time.
We cut the broken chocolate into pieces in a pan together with the whipped cream, then we melt it over low heat. Bring the composition to the boil, set aside and mix until completely homogenous. Let cool, then refrigerate.
The cream should be very well cooled and slightly thickened. Then mix it until it becomes fluffy. At the end we put a few drops of rum essence.
Beat the egg whites with a pinch of salt until they harden, then add the sugar and mix again until you get a firm meringue. Stirring lightly, add the yolks that we mixed separately with oil, then the flour mixed with baking powder. At the end, add the chopped chocolate pieces with a knife. Pour the composition into the tray (20 cm in diameter) lined with baking paper and bake on medium heat for about 25-30 minutes, until the top becomes firm to the touch and lightly browned. Remove to a grill and leave to cool.
We cut the well-cooled top into 3 parts. We also divide the cream into 3. Distribute the cream between the worktops. We will coat the cake with a part of the cream. I preferred an extremely simple decor, but that only depends on your preference. And imagination, of course! 😉
