Here is the turn of the long list of cake recipes that I kept well :)). A cake with coffee and mascarpone, tasty, cool, delicious… and the compliments could continue. But above all it is flavored with coffee and "made up" with chocolate :)))
- For the countertop:
- 8 eggs
- 200 g sugar
- 200 g flour
- 100 g butter
- 1 baking powder
- For the cream:
- 150 g white chocolate
- 250 ml liquid cream
- 5 g gelatin
- 250 g mascarpone
- For the biscuit top:
- 15 biscuits
- ~ 200 ml hard coffee, without sugar
- For the glaze:
- 100 g dark chocolate
- 50 g butter
- 50 ml liquid cream
Preparation Coffee and mascarpone cake:
Soft butter at room temperature mix with sugar. Then add the yolks, one by one, mixing well after each one. Then add the flour mixed with baking powder and finally the beaten egg whites with a pinch of salt.
Bake 2 worktops in the tray (25/35 cm) lined with baking paper, over medium heat, about 20 minutes. Remove to a grill and leave to cool.
We hydrate the gelatin in a few tablespoons of cold water.
Melt the broken chocolate pieces on low heat with 100 ml liquid cream. When it has reached boiling point, set it aside and mix well. When it has cooled a little, add gelatin and mix until it melts and the composition is uniform. Let cool for about 2 hours.
After this time, the consistency of the cream will still be quite soft, but it is not a problem because we will mix it and we will get a delicious and fluffy cream,
in which we will gradually incorporate the mascarpone cheese and the rest of the whipped cream (150 ml). We will incorporate the whipped cream, stirring with a spoon, with movements from bottom to top.
Put the cold coffee on a plate. We pass the biscuits briefly through the coffee, on both sides.
Melt the chocolate over low heat together with the butter and liquid cream. When it has reached boiling point, set aside and mix well. Let it cool.
I syruped the tops with a little syrup made of water + sugar + 1 tablespoon of brandy. It is not necessary to syrup them, you syrup them only if you consider it necessary.
Pour half of the cream over the first counter, put the biscuits syruped with coffee (their position is strictly random :)))
the other half of the cream and the second syrupy top. Glaze with chocolate and let cool for at least 1 hour, then portion as desired.
