Ingredients:

  • 50 g butter
  • 50 g white chocolate
  • 2 tablespoons starch
  • 250 ml milk
  • 100 ml of hard coffee
  • 3 eggs
  • 3 tablespoons sugar
  • 1 teaspoon ness (to enhance the taste of coffee)

Preparation Coffee pudding:

Melt the butter in a bowl over low heat. Add the starch and mix vigorously so that no lumps form. Then pour the milk and coffee in which we dissolved the ness and mix until smooth. Put the pot on the fire again and boil until the composition begins to thicken, stirring constantly. Set aside and add the chopped chocolate. Stir until the chocolate melts and let it cool.

In the warm composition, add the yolks one by one, then the beaten egg whites with a pinch of salt and sugar. We mix the egg whites lightly with a spatula, with movements from bottom to top. We will get a frothy composition.

We pour the composition into heat-resistant vessels that we will put in a larger tray in which we put water. Bake on medium heat until the surface of the pudding becomes firm to the touch and cracks appear on the surface.

Coffee pudding is served with whipped cream or ice cream, but it's just as good.
