Although I have a culinary blog, with cake recipes in particular, it sometimes happens that I don't have dessert in the fridge and put yams in some chocolate eggs or take a bag of puff pastry seriously :))) that I could get used to it, but no! I can't resist too much without "crafting" a cake, even if it's a simple cake or a more elaborate one.
Initially I wanted to make a blackberry, but the countertop came out so good and beautiful that I had to make a cream 😀 Then what you see here came out!
- 300 g flour
- 150 g powdered sugar
- 50 g cocoa
- 1 baking powder
- 200 ml of milk
- 3 eggs
- 100 ml oil

- For cream cheese:
- 150 g Almette cheese with sour cream
- 200 ml whipped cream
- 100 g sugar
- 1 sachet of vanilla sugar
- vanilla essence
- Caramelized nuts:
- 100 g walnut kernels
- 150 g sugar
Preparation Cake with cream cheese and caramelized nuts:
In a bowl sift the cocoa flour, powdered sugar, baking powder and a pinch of salt. Mix them, then make a hole in the middle and pour the oil, milk and 3 eggs. We start mixing at the low speed of the mixer, until the ingredients are mixed, then we increase the speed of the mixer and mix until we obtain a homogeneous and glossy composition.
The obtained composition is poured into a tray (20/30 cm) lined with baking paper and bake the top in the hot oven, over medium heat, for about 40-50 minutes, depending on the oven. When it is ready, take it out on a grill and leave it to cool.
We put the Almette cheese cream, the sugar and the vanilla essence in a bowl and mix them well enough to homogenize.
Separately mix the whipping cream until it starts to take on consistency. Add the vanilla sugar and mix until the cream becomes fluffy. It is not necessary to be stiff, just to be fluffy.
Mix the 2 compositions and mix well until you get a firm cream.
We put the cream over the cooled countertop.
Melt the sugar over low heat. When it has become liquid, add the walnut kernels and mix quickly, so as to cover all the walnuts with caramel. Pour over a piece of baking paper and leave to cool, then put them on the robot and grind well.
Sprinkle the caramelized walnuts over the cream cheese, level and put the cake in the fridge for an hour, two, three :))) as long as each one lasts, but I'll tell you it's better the next day 😉
