I was absent for a few days, but not because I wanted to, but because it suited me and the disease doesn't really take into account our wishes. But now we are fine and we came to you with a tasty cake, in which we combined all the favorite flavors of the family. Crispy chocolate chip cookie top;), fluffy and fine cream cheese and caramel topping… what more could you want?

  • Biscuit countertop:
  • 125 g chocolate chip cookies
  • 75 g simple biscuits
  • 60 g butter
  • Cream:
  • 300 g Almette cream cheese
  • 300 ml cream for whipped cream / liquid whipped cream
  • 125 g sugar
  • 1 sachet of vanilla sugar
  • vanilla essence
  • Caramel:
  • 150 g sugar
  • 50 g butter
  • 100 ml cream for whipped cream / liquid whipped cream

Preparation Cake with cream cheese and caramel:


The 2 types of biscuits are mixed in a robot until a fine crumb is obtained. Add the melted butter and mix again until you get a composition like crumbs that you turn over in a removable tray (20 cm in diameter). Press well with a spoon or the bottom of a glass, so as to obtain a compact top. Refrigerate until cream is ready.


Put the cream cheese, sugar and vanilla essence in a bowl and mix well enough to blend.

Separately mix the cream for the cream until it starts to take on consistency. Add the vanilla sugar and mix until the cream becomes fluffy. It is not necessary to be stiff, just to be fluffy.

Mix the 2 compositions and mix well until you get a firm cream.

  • The cream is one with an airy texture, it is firm but not stiff. If you want a much firmer texture you can add 1 teaspoon of gelatin.


We put the sugar in a saucepan, on low heat until it becomes liquid and acquires a golden color. Be careful not to burn.

Set aside from the heat, add the whipped cream (watch out for steam!). Pull the bowl back on the fire and stir continuously until all the caramel melts, at which point we add the butter. Stir continuously and boil until the composition thickens, until it reaches the consistency of a cream. Set aside and leave to cool.

Pour the cream over the cookie sheet, level it, then cover it with the caramel topping.

Wrap the tray in cling film and let it cool for a few hours.
