I tried many cream soup recipes. They are my favorites and I don't get the same one every time. The combinations are numerous, and when the forest is generous, I try to make the most of it. I usually say that: more organic than that is not possible. I pick the mushrooms myself, carefully, with love and with great passion. What I like most is the peace I find here in the forest, then the smell of the forest, the smell of freshly picked mushrooms and the adrenaline I feel when I find them. J )

Mushroom soup is fragrant, very fine, and for some it may even be a delicacy.

Ingredients:

:

1 red onion

3-4 cloves of garlic

2-3 tablespoons olive oil

100 gr bacon (or bacon, ham)

2-3 white potatoes

700-800 gr fresh mushrooms

200 gr fat cream (over 40%)

Salt, pepper, thyme

About 1.5 l of water

To serve: croutons, fried bacon, slices of mushrooms fried in a little butter

Method of preparation:

Being very hot outside I chose to make soup at Crock-Pot Express with pressure cooking.

Chop the onion and garlic. Connect the Crock-pot Express to the power supply, the Brown / Sote function and press the start button. Add the oil and let it heat up. Add onion and garlic and cook for 1-2 minutes. Add the bacon and leave to brown.

Add the peeled and diced potatoes, the peeled and sliced mushrooms or whatever you like.

Put the lid on, set the device on the Soupe function, for 30 minutes and make sure that the pressure valve is closed. After the time expires, press the start / stop button, release the valve with a kitchen glove.

Transfer all the contents to a pot in which we are going to make and store the soup. CAREFUL!!! A vertical blender is not used in the Crock-Pot Express bowl. There is a risk that the vessel will be scratched.

Blend the soup with a vertical mixer until it becomes creamy. We make the consistency according to our taste, ie thicker or thinner. Season to taste with salt, freshly ground pepper and thyme. Add sour cream and mix for the last time. Put the pot on the fire and let it boil.

Serve the soup according to your preferences, with croutons,   fried bacon, slices of mushrooms fried in butter.

TIPS: the less beautiful mushrooms are chosen for the soup. It is important that they are cleaned well and not with worms.
